Note from Ben Wisner: contrary to the impression in the article,
whole grain maize is a good food, and, combined with a legume (bean or pea) produces a
meal with a perfect amino acid (protein) pattern. Also at the end of the article, the
impression is given that cassava is rich in vitamins, mineral, and protein. The tuber
isn't. It's only 0.5% crude protein. However, the cassava leaves do have protein,
vitamins, and minerals.
